zucchini

A few nights ago I made some zucchini pancakes for dinner.  I have to credit my mother with this recipe, they're so delicious and easy to make.  I've always thought of them as a summer food, mainly because we usually make them with fresh zucchinis from the garden, but they are really good any time of the year.
